Monster Peanut Butter Blondies
1 cup brown sugar ½ cup peanut butter 2 eggs 1 teaspoon vanilla extract 1 cup flour ½ teaspoon salt ½ teaspoon baking powder ¼ teaspoon baking soda ½ cup toppings (i used chocolate chips, mini m&m’s & toffee.) Preheat oven to 325˚f. Line an 8″ square pan with foil or parchment paper & spray that with nonstick spray. Melt the butter in a large saucepan over medium heat. Remove from the heat & stir in the sugar & peanut butter. Allow to cool for a few minutes before adding the eggs & vanilla. In a small bowl stir together the flour, salt, baking powder & baking soda. Mix dry into wet, stirring until well incorporated. Spread batter in the pan (I don’t know if you can even really call this a batter, it’s super thick, more like dough.) Sprinkle toppings evenly over the top and press down a bit. Bake for 20 to 25 minutes until a toothpick comes out with just a few crumbs. Don’t overbake!
